Jacques Carillon

The Carillon family has been making wine in Puligny-Montrachet—one of Burgundy’s most renowned wine regions—since 1520. Today, the domaine is run by Jacques Carillon. After completing his studies at the viticultural school in Beaune, he joined the family estate in 1980. In 2010, the domaine was divided between Jacques and his brother François, the two sons of Louis Carillon. That same year, Jacques and his wife Sylvia established their own estate: Domaine Jacques Carillon.

The domaine covers 5.25 hectares of vineyards, the majority of which are located in Puligny-Montrachet. Additional parcels are found in Chassagne-Montrachet, Saint-Aubin, and Mercurey. From these holdings, the domaine produces Puligny-Montrachet, several Puligny-Montrachet Premiers Crus, Chassagne-Montrachet, and Bâtard-Montrachet. For generations, the vineyards have been managed with deep respect for tradition, and the domaine has built a strong reputation as a producer of classic, often understated yet consistently captivating wines.

Viticulture at Domaine Jacques Carillon is practiced almost entirely organically. No herbicides are used, and the soil continues to be worked manually and with a plough, ensuring a healthy vineyard environment and allowing the terroir to fully express itself. To control production, Carillon prunes the vines short and enforces strict yield limits. The vines are also carefully thinned to give the grapes maximum sun exposure. Harvesting is done by hand, after which fermentation and élevage take place in oak barrels for at least one year. Before bottling, the wines spend an additional six months in stainless steel tanks to clarify and settle, enhancing their purity and precision.

Ultimately, Jacques Carillon’s aim is to craft wines that express the authenticity and character of the terroir on which they are grown.
