Jean-Pierre et Alexandre Ellevin
Domaine Ellevin has been based in Chichée, a small village southeast of Chablis, for more than a century. The domaine is currently run by the 4th generation, Son Alexandre has been at the helm since 2003. Under his leadership, the estate with more than 16 hectares of vineyards is managed across the 2 banks of the Serein River. The domaine boasts parcels of Petit Chablis, Chablis and Chablis Premier Cru.
The wines undergo careful vinification. Alcoholic fermentation is followed by malolactic fermentation, which subtly refines the wine’s acidity. Aging is done traditionally in stainless steel vats, which best expresses the typical minerality of Chablis. The wines are aged on their fine lees at a low temperature, with the Petit Chablis maturing for around 6 months, and the Premier Cru’s around 12 months. After this ageing period, the wine is bottled – naturally at the domaine itself.
Domaine Ellevin operates with a highly sustainable approach, driven by passion, respect for the terroir and attention to detail. Alexandre and his team are committed to preserving the natural richness of the vineyards. they closely monitor the health of the vines, treating them with care. The aim is to capture the unique characteristics of Chablis in their wines, by optimising the work in the vineyard and controlling yields for grapes of the highest quality. With these wines, you get a glass full of the essence of Chablis: refreshing, pure and with an elegant minerality. They are not only beautifully flavoured, but also surprisingly affordable.
