Domaine du Chancelier
Located in the centre of Beaune, Domaine du Chancelier is a continuation of the wine heritage of Nicolas Rolin, founder of the famous Hospices de Beaune. Elsa & Cédric Ehrhart work in the centuries-old 18th century cellars with respect for tradition and terroir. Elsa, an experienced oenologist, and her partner have completely renovated the historic building, including the barrel room, preserving the original beams, stone and timberwork.
Elsa & Cédric Ehrhart are passionate about Burgundy’s rich terroir and climate. Their goal is to maximise the expression of each vineyard’s unique characteristics. The estate produces a dozen wines including Meursault, Santenay, Montrachet and Pommard. The vines are nurtured naturally as they grow, respecting the living soil and the rhythms of nature. The result is wines that reflect the essence of their origin, the ultimate goal of a Burgundy winemaker.
Most of the vineyards are owned by the winery and are certified organic. The grapes are harvested by hand and transported in small boxes to avoid damage and premature fermentation. The selection is strict: only the best grapes are vinified. This is done through careful extraction and controlled temperatures, followed by a long maturation on the fine lees in French oak barrels. Domaine du Chancelier works with 400- and 500-litre barrels to ensure a subtle wood influence and perfect balance.
From harvest to final bottling, all decisions are guided by tasting and analysis to achieve absolute perfection.
