Domaine des Pérégrins

Domaine des Pérégrins is located in Poilly-sur-Serein, on the edge of the Chablis appellation, and is run by Eléonore Moreau. It began in 1982, when her father Laurent planted the first vineyards. What was then a small project grew over the years into a full-fledged family estate. Since 2022, the wines have been officially certified organic – a logical step after years of working with respect for nature and terroir.

The domaine now covers over 14 hectares of vineyards, divided between Petit Chablis, Chablis and Chablis Premier Cru, planted on both Portlandian and Kimméridgian limestone soils. In addition, through family connections, the family owns a small plot of Pinot Noir in Savigny-lès-Beaune, whose grapes are vinified in Poilly-sur-Serein.

Organic cultivation is central to the vineyards. Harvesting is mainly done by hand, chemical fertilisers and herbicides are banned and ground covers grow between the vines to keep the soil healthy. Pruning and defoliation are carefully carried out to keep the plants airy and strong, with the aim of harvesting healthy, concentrated grapes.

Eléonore also takes a natural approach in the cellar. Both alcoholic and malolactic fermentation take place spontaneously, without additives or temperature control. The wines mature exclusively in stainless steel – but for a long time, up to 18 months sur lie – providing texture, complexity and finesse.

Domaine des Pérégrins’ style is characterised by elegance, freshness and distinct minerality. Both Petit Chablis and Chablis show pure fruit and refined structure, beautifully reflecting the diversity of their terroirs. Thanks to the time and care Eléonore gives her wines, they are distinguished by softness, balance and striking precision.
