Organic cultivation is central to the vineyards. Harvesting is mainly done manually, chemical fertilisers and herbicides are banned, and ground covers grow between the vines to keep the soil healthy. Pruning and defoliation are carefully carried out to keep the plants airy and strong, with the aim of harvesting healthy, concentrated grapes.
