Clément Lavallée
Clément Lavallée grew up in a winemaking family. His father founded Domaine Grand Roche in Saint-Bris-le-Vineux (Yonne). From an early age, Clément became fascinated by winemaking. After several wanderings, during which he deepened his knowledge of grape varieties, terroir and vinification, he returned to Saint-Bris-le-Vineux in 2018 to make his first wines of his own. A year later, he decided to become fully independent. Not much later, his sister Caroline Lavallée joined him. They started buying small plots in Chablis, and grapes from Saint-Bris and the Côtes d’Auxerre.
Together, Clément and Caroline produce a beautiful range of Bourgognes from Yonne, including Chablis, Saint-Bris and Côtes d’Auxerre. Clément also releases a limited-edition special cuvée every year. He works completely organically, without chemicals or insecticides, in the vineyard. In the cellar, he follows a pure and natural method. He uses only indigenous yeasts, avoids sulphur in pressing and prefers to move the must by gravity rather than pumping.
By combining influences from different wine regions, Clément creates fresh, modern wines. Also from lesser-known appellations. His innovative approach and respect for the terroir have given him a prominent place within the new generation of Burgundy winemakers.
