François Mikulski
Although Domaine François Mikulski has only been in existence since 1992, the family-run winery has now built a solid reputation. Its wines feature on the wine lists of many top restaurants in France, and are praised for their elegance and purity. Marie-Pierre and François Mikulski make their wines according to organic principles, with a strong focus on careful treatment of both the soil and the vines. They work with homemade compost, use eco-friendly phytosanitary products and plough between the vines to maintain the vineyard’s natural balance.
Yields are deliberately limited to ensure quality. For white wines, yields are around 45 hectolitres per hectare. In the cellar, vinification takes place exclusively with natural yeasts, in a cool environment where temperatures do not exceed 8°C. Maturation takes place in French oak for 12 months, using up to 20% new wood. It is all about precision, finesse and the pure expression of the terroir.
François Mikulski’s wines are known for their complexity and intensity. They are accessible young, but gain considerable depth with ageing. Storage potential is a constant factor with these wines. Apart from the contents, the presentation also stands out: the bottles bear a minimalist label with a typical chalk lettering. This design is inspired by the way winemakers write with chalk on their barrels and bottles during maturation in the cellar. A subtle nod to craftsmanship and tradition.
