Sylvain Pataille

Sylvain Pataille is now regarded as one of Burgundy’s leading winemakers. A passionate advocate of organic and biodynamic viticulture, he also works as an oenologist for some of the region’s most prestigious domaines. His philosophy in the cellar is straightforward: to work as naturally as possible, with a strong emphasis on organic vineyard management, natural vinification, and meticulous élevage. Pataille avoids chemical pesticides and fertilizers, relying solely on natural yeasts.

Pataille began making wine in 1999 and has since built his estate—now spanning 15 hectares—from the ground up. Based in Marsannay, at the northern tip of the Côte d’Or, he has transformed his domaine in just 15 years into one of the most respected in the region. In 1999, Pataille was still working in a laboratory, focusing on the biochemical aspects of winemaking. That makes his rapid rise to the ranks of Burgundy’s elite all the more remarkable.

His vineyards are spread throughout Marsannay, with a significant share planted to Aligoté, alongside Chardonnay and Pinot Noir. Pataille firmly believes that Aligoté has the potential to produce world-class wines, and he vinifies no fewer than 12 different cuvées from various plots. His wines are a shining example of what can be achieved when exceptional vineyard practices are paired with oenological expertise: balanced wines with refined texture and a pronounced minerality.
