Grapes are harvested by hand, carefully selected and taken to the cellar in 20-kilo crates to avoid damage. In the vineyards, the soil is ploughed over, making the use of herbicides completely unnecessary. Fermentation takes place on neutral wood and in stainless steel tanks, lasting no less than 18 months.
