Yields are deliberately low and some grapes are matured in new charred oak barrels. The winemaking process is meticulous. After a thorough thinning, leaving only the best bunches, the grapes are soaked in cold water for a week. Only then does fermentation begin, which takes place at a surprisingly low temperature. This Pinot Noir comes from old vines (over 65 years old).
