Pommier’s method is meticulous and natural. The harvest is mainly done by hand, the grapes are strictly selected and fermentation is done exclusively with indigenous yeasts. For aging, they opt for patience and precision: Petit Chablis and Chablis are aged in stainless steel, while the Premier Cru’s are partly raised in French oak – usually one-third barrel, two-thirds tank – for around 18 months. The results are wines with crystal-clear minerality and lively acidity. Wines that retain finesse and purity, while carrying the signature of Isabelle and Denis Pommier.
