Aging is done traditionally in stainless steel vats, which best expresses the typical minerality of Chablis. The wines mature on their fine lees at a low temperature, with the Petit Chablis maturing for around 6 months, and the Chablis and Premier Cru’s around 12 months. After this maturation period, the wine is bottled – naturally at the domaine itself.
