A powerful and expressive wine, the pinnacle of Chablis. Sourced from grapes from the ‘Les Clos’ vineyard, probably the most famous climat of the Chablis Grand Cru appellation. A wine with a long finish and salty undertones. The grapes are harvested by hand, using treatments and sprays only when really necessary. This leads to spontaneous fermentations, without clarification or bâtonnage. Another feature of Dauvissat is its rigorous selection process at harvest time, which results in relatively low yields.
