Work is done as naturally as possible, with a strong focus on organic vineyard management, natural vinification and careful élevage. Pataille avoids the use of chemical pesticides and fertilisers and uses only natural yeasts. This wine was aged in wood for 18 months, and then raised on stainless steel for a further six months.
