Work in the vineyards is sustainable, with great attention paid to the health of the vines and soil. The harvest is largely manual and strictly selected, so that only perfectly ripe grapes reach the cellar. In vinification, they take a classic approach: fermentation with indigenous yeasts and careful aging in oak barrels, only some of which are new, to preserve the finesse and expression of the fruit.
